Italian baked chicken goujons

    Moreish and healthier than fried, the entire family will love these crispy oven-baked chicken goujons.

    Serves: 4 

    • 500g skinless chicken breast fillets, cut into strips
    • 1 egg
    • 1 tablespoon olive oil
    • 1 tablespoon milk
    • salt and black pepper to taste
    • 100g dried breadcrumbs
    • 75g grated Parmesan cheese
    • 1 teaspoon dried basil

    1. Preheat the oven to 240 C / Gas 9. Line a baking tray with baking parchment.
    2. Beat the egg with the olive oil, milk, salt and pepper. Add the chicken strips and mix to coat.
    3. In a shallow bowl or dish, combine the breadcrumbs, Parmesan and basil. Dip each chicken strip in the breadcrumbs, coating all sides. Place each on the parchment-lined tray.
    4. Bake for 15 minutes, or until crisp and golden brown.


    Serve these chicken goujons with a crisp green salad and potatoes, or try them in a wrap with mixed greens and your favourite salad dressing.
