Garden pea soup

    An easy pea soup ready in minutes. It's amazing that something so gorgeously bright and green can come from a bag of frozen peas!

    Serves: 4 

    • 20g butter
    • 1 onion, chopped
    • 750ml chicken or vegetable stock
    • 500g frozen garden peas
    • salt and freshly ground black pepper
    • 1 tablespoon minced fresh mint
    • 4 tablespoons Greek yoghurt

    1. Melt the butter in a large saucepan. Add the onion, cover and cook over a low heat for 5 minutes, or until soft. Don't let the onion brown.
    2. Pour the stock over the onion, stir, then cover and continue to cook for 10 minutes.
    3. Add the peas. Bring back to a simmer and cook until the peas are tender, about 10 minutes.
    4. Puree the soup using an immersion blender, or carefully puree in batches in a liquidiser or food processor.
    5. Garnish each serving with a dollop of Greek yoghurt and a sprinkle of the fresh mint, if desired.

    Very simple to make from ingredients I normally have at home. I didn't use mint or yoghurt and it was really nice. I left it a little coarse too. Easy peasy....  -  24 Nov 2016
