About this recipe: A quick an easy meal. These crab fritters are made with basil, mint, lime and mascarpone cheese. Serve on a bed of salad leaves with a wedge of lime and crusty bread.

  • 1 pack of Seafood & Eat It Fifty Fifty
  • A handful of basil and mint, chopped
  • 1 teaspoon of mascarpone cheese
  • A squeeze of lime
  • 60g breadcrumbs
  • A handful of plain flour

Prep:5min  ›  Cook:5min  ›  Ready in:10min 

  1. Mix the crab meat, herbs, mascarpone and lime juice.
  2. Add enough breadcrumbs to give a firm mixture that can be formed into two slightly flattened balls.
  3. Coat with plain flour and shallow fry until golden.
