Fruktsoppa (Fruit soup)

    Enjoy the taste of my Scandinavian simple sweet desert, enjoy!! A lovely fruit soup with prunes, apricots, apple, raisins and currants, with a touch of pudding rice.

    Makes: 1 large bowl

    • 100g prunes
    • 100g dried apricots
    • 1.5 litres water
    • 250g caster sugar
    • 75g pudding rice
    • 1 cinnamon stick
    • 2 slices of lemon
    • 1 large cooking apple, peeled and cut into large chunks
    • 2 tablespoons raisins
    • 2 tablespoons currants

    1. In a large bowl place the prunes and dried apricots and soak in the water for 30 minutes.
    2. Pour the prune and apricot mixture including the water into a large saucepan. Add the sugar, pudding rice and cinnamon stick.
    3. Bring to the boil and then add the lemon slices and allow to simmer for 10 minutes. Add apple, raisins and currants.
    4. Cover and simmer for 5 more minutes until the apple is just about to break up. Cool and serve at room temperature. This can also be stored in the fridge for two days. Enjoy!


    Add other fruits if you want (peaches are good). Lovely served with ice cream.
