About this recipe: A gorgeous chocolate sponge cake that uses just six ingredients. Spread this chocolate sponge with chocolate buttercream for a really special cake.


Serves: 6 

  • 4 eggs
  • 125g caster sugar
  • 110g plain flour, sifted with
  • 50g butter, melted
  • 2 tablespoons unsweetened cocoa powder

  1. Preheat the oven to 180 C / Gas 4. Butter a 23cm round cake tin and dust with cocoa powder.
  2. Break the eggs into a heatproof bowl and add the sugar. Place the bowl over a saucepan of simmering water (not boiling), and whisk for about 15 minutes, using an electric hand mixer, until the mixture is thick and leaves a ribbon trail when the beaters are lifted. Remove the bowl from the heat and continue beating until the mixture is cold.
  3. Sift the flour and cocoa powder over the top of the mixture (this is a second sifting), then very gently pour in the cooled, melted butter. Gently fold in the butter and flour, ensuring there are no pockets of flour left.
  4. Pour the mixture into the sponge tin and spread the top evenly with the back of a spoon. Bake for 30 to 35 minutes until well risen and springy to the touch. Cool for 2 to 3 minutes in the tin, then turn out onto a wire rack and leave to cool completely.

Hi, I am willing to try the recipe and in the ingredients you used only plain flour but didn't mention about adding baking powder or baking soda..why? Can I use all purpose flour for this recipe. Please I need to try this recipe soon - 20 Sep 2012


I made this cake for my son's birthday, it was gorgeous I topped it with chocolate spread and decorated it with broken chocolate yum yum yum - 03 Aug 2012


The cake did not rise, it was doughey and far too dense. Would not recommend this recipe. If you want to make a chocolate cake try another recipe with self raising flour or baking powder - 05 Apr 2015
