About this recipe: Easy muffins for a great day out or with the afternoon tea or coffee. Enjoy plain or with your favourite topping.

Makes: 12 muffins

  • 240g (2 cups) plain flour
  • 1 tablespoon baking powder
  • 135g (3/4 cup) soft brown sugar
  • 150g butter (at room temperature)
  • 3 eggs
  • 100g ground almonds
  • 75ml milk
  • 60g dark chocolate (chips or grated)
  • 80ml whisky

Prep:25min  ›  Cook:20min  ›  Ready in:45min 

  1. Preheat the oven to 190 C / Gas 5. In one bowl, mix flour and baking powder.
  2. In a second bowl, beat sugar with butter. Add eggs, one at a time. Beat for 3 minutes, before adding almonds, milk, chocolate and whisky.
  3. Add flour, mix carefully. Fill in muffin form.
  4. Bake 20 minutes or until tester comes out clean and tops are golden brown.

What a great Banana muffin recipe, with just the right twist. I did make a few changes. used 4 good size bananas. Also added banana extract in place of the vanilla and 1/4 cup chopped walnuts. I found it better to beat the sugar and butter together before adding the butter. Great taste and texture. Thank you for sharing. - 12 Jan 2013
