Shortbread cookies

    The perfect shortbread cookies to have with tea. These have only three ingredients - could not be simpler!

    Ingredients
    Makes: 24 cookies

    • 250g (9oz) plain flour
    • 75g (3oz) caster sugar
    • 175g (6oz) butter

    Method
    Prep:20min  ›  Cook:30min  ›  Extra time:5min cooling  ›  Ready in:55min 

    1. Heat the oven to 160 C / Gas 2 1/2. Grease a baking tray.
    2. Mix flour and sugar in a bowl, rub in butter. Knead well to form a smooth paste.
    3. Divide into two equal parts, shape and flatten into rounds, about 1cm thick. Cut into fingers, and decorate with fork markings. Place on the baking tray.
    4. Bake until pale and golden, about 30 minutes.
