    About this recipe: This has been a family favourite for years. Even my meat eating stepdad loves it. You can change the veg in this for anything you want - my mum used to use cauliflower instead of broccoli. The quantities can easily be changed too, this serves two greedy people, or 3-4 people with small appetites.

    Ingredients
    Serves: 2 

    • 2-3 eggs
    • 1 large carrot, chopped
    • 1 medium head broccoli, chopped
    • 500g potatoes, or enough to cover your dish
    • 300ml (1/2 pint) cheese sauce
    • 2 tomatoes, chopped
    • 1 handful mature Cheddar cheese

    Method

    1. Preheat the oven to 200 C / Gas 6.
    2. Put the eggs on to hard boil while you chop the vegetables. Put the carrot and broccoli in a pan and cook until tender.
    3. Boil and mash the potatoes.
    4. Make your cheese sauce. Either make from scratch with plenty of cheese, or use a packet and add extra cheese. (I do this in the pan I boiled eggs in to save on washing up.)
    5. Shell and chop your eggs into 8. Mix all the vegetables with the cheese sauce and pour into a casserole dish. Top with the mash, sealing the edges as much as possible to avoid the sauce leaking over the oven. Sprinkle a handful of cheese over the top.
    6. Bake until the cheese browns, about 25 minutes.

    Tip

    I usually but a baking tray under the dish because the cheese sauce tends to leak out.

    Tip

    The egg in this doesn't reheat well, so skip it if you're planning on keeping for later.
