About this recipe:This has been a family favourite for years. Even my meat eating stepdad loves it. You can change the veg in this for anything you want - my mum used to use cauliflower instead of broccoli. The quantities can easily be changed too, this serves two greedy people, or 3-4 people with small appetites.

Preheat the oven to 200 C / Gas 6.
Put the eggs on to hard boil while you chop the vegetables. Put the carrot and broccoli in a pan and cook until tender.
Boil and mash the potatoes.
Make your cheese sauce. Either make from scratch with plenty of cheese, or use a packet and add extra cheese. (I do this in the pan I boiled eggs in to save on washing up.)
Shell and chop your eggs into 8. Mix all the vegetables with the cheese sauce and pour into a casserole dish. Top with the mash, sealing the edges as much as possible to avoid the sauce leaking over the oven. Sprinkle a handful of cheese over the top.
Bake until the cheese browns, about 25 minutes.
I usually but a baking tray under the dish because the cheese sauce tends to leak out.
The egg in this doesn't reheat well, so skip it if you're planning on keeping for later.
