    About this recipe: I found this recipe in a cookbook and played around with it some. Now it's the only way my family will eat tuna! In the warmer weather my girls request weekly and I usually mix up an extra large batch to keep on hand for them to snack on. Even friends who normally don't like tuna can't stop eating it!!

    Ingredients
    Serves: 3 

    • 2 (175g) tins tuna in water, drained and flaked
    • 1 small red onion, finely diced
    • 2 sticks celery, thinly sliced
    • 1 small cucumber - peeled, seeded and chopped
    • 2 medium plum tomatoes, coarsely chopped
    • 50g Feta cheese, crumbled
    • 10 to 12 Kalamata olives, chopped
    • 2 1/2 tablespoons fresh lemon juice
    • 1 tablespoon olive oil
    • 1/4 teaspoon freshly ground black pepper
    • 1/8 teaspoon coarse sea salt
    • crushed red chilli flakes to taste (optional)

    Method
    Prep:15min  ›  Cook:5min  ›  Extra time:1hr chilling  ›  Ready in:1hr20min 

    1. Mix all ingredients gently to combine, chill for 1 hour to let flavours blend. Serve on whole grain bread, with pita chips or woven wheat crackers.
