Balti chicken curry

    This is a healthy, low fat, quick chicken balti with plenty of spice. Goes well with warm naan bread, if you don't feel like cooking rice.

    Serves: 2 

    • 1 tablespoon oil
    • 2 skinless chicken breasts, cubed
    • 1 onion, sliced
    • 1 green pepper, seeds removed and sliced
    • 1 red chilli pepper, sliced
    • 1 garlic clove, crushed
    • 1 (5cm) piece fresh ginger, peeled and grated
    • 1 tablespoon garam masala
    • 1/2 teaspoon turmeric
    • 1/2 teaspoon ground cumin
    • 1 large tomato, chopped
    • 1 tableespoon tomato puree
    • 120ml water or chicken stock
    • 1 bay leaf
    • 1 teaspoon lemon juice

    1. Heat oil in a heavy based frying pan or wok. Add chicken and cook for 4 minutes or until browned. Set aside on a plate.
    2. Add onion and cook until softened. Add green pepper, chilli pepper, garlic and ginger. Stir for a few minutes.
    3. Add chicken back in; stir in garam masala, turmeric, cumin, chopped tomato, tomato puree and stock. Add bay leaf, then cover and simmer for 10 or 15 minutes.
    4. Taste and season with salt and lemon juice.

    Very tasty. I added double the amount of water to get more juice because my 10 year old thought it was a bit hot. It was a winner. Definitely will be making this again.  -  12 Jan 2016
