Easy chocolate cupcakes

    I've been making these cupcakes for ages for friends who visit our house. They always seem to go down well! If you're making a bigger batch and have a range of people to feed, it's sometimes worth making half of the mixture with vanilla extract and half with cocoa powder so that you've got a variety of cakes to choose from.

    Makes: 24 cakes

    • For the cakes
    • 200g butter
    • 200g caster sugar
    • 4 eggs
    • 1/2 teaspoon cocoa powder or vanilla extract
    • 200g self-raising flour
    • For the icing
    • 280g butter
    • 560g icing sugar
    • 1 to 2 tablespoons milk
    • 1/2 teaspoon cocoa powder or vanilla extract
    • 24 cupcake cases

    1. Preheat the oven to 180 C / Gas 4.
    2. For the cakes: Beat the butter until it is soft. Mix the butter and caster sugar together.
    3. Add the eggs to the mixture and beat. Add the vanilla essence at this stage if using.
    4. Add the flour and mix well. Add the cocoa powder at this stage if using. Divide the mixture into cupcake cases.
    5. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 15 minutes.
    6. For the icing: Meanwhile, beat the butter until soft. Then add half of the icing sugar and beat until smooth.
    7. Add the remaining icing sugar and beat. Add 1 tablespoon of milk and beat until creamy and smooth. Add the remaining milk if necessary to achieve the creaminess.
    8. Add the cocoa powder or vanilla extract, mix well and leave to stand for 5 minutes.
    9. Allow the cakes to cool for 30 minutes and then decorate with the buttercream.

    Serving suggestion

    Sprinkles look really good on these, as do crushed up chocolate button pieces.

    The cakes were heavy with no air in to make them light and fluffy. Recipe followed but something can't be right somewhere.  -  14 Oct 2012

    my main comment is about the icing, which was very tasty, but required 3 TABLESPOONS of cocoa powder to make it work, as opposed to the half a teaspoon the recipe calls for. Other than that, I thought it was a good recipe.  -  14 May 2012
