Soft cheese sponge cake

    This is a soft cheese sponge cake: just simply substitute the butter for soft cheese (I used chocolate Philly®) and Voila! a moist sponge cake!

    Serves: 6 

    • 170g (6oz) self-raising flour
    • 110g (4oz) caster sugar
    • 110g (4oz) soft cheese
    • 2 eggs
    • 4 tablespoons water

    Prep:15min  ›  Cook:25min  ›  Extra time:20min cooling  ›  Ready in:1hr 

    1. Preheat the oven to 180 C / Gas 4.
    2. Add all of the ingredients into one bowl and mix. It will become very sticky so just add more water or milk if you need to. Spoon the mixture into a lined cake tin.
    3. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 22 minutes.
