Preheat the oven to 200 C / Gas 6. Cover the bottom of a large oven proof dish with the olive oil.
Rub the oil into the chicken and arrange pieces on the tray.
Arrange the rest of the ingredients on the tray around the chicken.
Sprinkle over the oregano.
Bake in the oven for one hour.
The beauty of this dish is that you can dress it up or down according to your taste and what you have available. Add as many or as little veggies as you like, mushrooms, chopped peppers, courgette, fresh tomatoes left on the vine all go well in this dish. Add new potatoes when in season. Sprinkle over some cheese, manchego, being Spanish, goes well with the chorizo but any cheese will work. Tuck some lemon wedges under the chicken for a citrus infusion.
This is a nice dish, but I wouldn't say it's fantastic. I added chopped carrots, sweet potato, courgettes, aubergine and mushrooms. At the end of cooking I added mozzerella pearls for a few minutes till they melted. - 29 Apr 2012
