About this recipe: Based on the lovely Nigel Slater recipe for toad in the hole. Sausages bake in a Yorkshire pudding batter - so easy!

Serves: 3 

  • 2 eggs
  • 125g plain flour
  • 150ml milk
  • 150ml water
  • 1 teaspoon wholegrain mustard
  • mustard seeds (optional)
  • 6 sausages
  • oil as needed
  • chopped onions to taste

Prep:25min  ›  Cook:30min  ›  Ready in:55min 

  1. Preheat the oven to 200 C / Gas 6.
  2. Mix the eggs, plain flour, milk, water, mustard and mustard seeds together to form a batter.
  3. Brown the sausages in a saucepan, with a little oil. Add some chopped onions, which can be used later in a gravy.
  4. Add a little oil into a baking tin, place the sausages in and pour the batter over.
  5. Bake for about 30 minutes or until the batter is golden brown.


Use the onions in a thick onion gravy and serve with mashed potatoes or just serve on its on!


I found this better cooked in a small dish so the batter envelops the sausages better. I've only made this once, and whilst the taste was great, I need to tweak the quantities for a thick batter.
