Mackerel and pesto pasta

    Easy, tasty pasta dish. Is just as nice with bacon or Mediterranean veg. And it's cheap to make, too!

    Serves: 3 

    • 1 tablespoon vegetable oil
    • 4 mackerel fillets or 1 big fresh mackerel
    • handful spaghetti pasta
    • 1 mozzarella cheese ball, sliced
    • 4 teaspoons green or red pesto, or to taste

    1. Heat oil in a frying pan. Bone and slice mackerel. Add to pan.
    2. Boil water with a pinch of salt and add pasta.
    3. When pasta is nearly ready, add sliced mozzarella to the mackerel. Stir in.
    4. Drain pasta and add mackerel and pesto. Stir well and serve.

    For some reason it has switched the order of prep. you need to boil the pasta before the rest.  -  03 Apr 2012
