Red wine chocolate cake

    This loaf cake is nicely moist from the red wine. You can brush it with apricot jam or add icing or ganache afterwards but it really does not need anything else to be delight.

    Serves: 16 

    • 250g butter, softened
    • 275g caster sugar
    • 1 teaspoon vanilla extract
    • 4 eggs
    • 250g plain flour
    • 5 teaspoons baking powder
    • 2 teaspoons ground cinnamon
    • 2 teaspoons cocoa powder
    • 100g chocolate chips
    • apricot jam, chocolate icing or ganache (optional)

    1. Preheat oven to 180 C / Gas 4.
    2. In a bowl beat until creamy. Gradually add the eggs, sugar and vanilla, stirring constantly.
    3. In a separate bowl, mix flour with baking powder. Add cinnamon and cocoa powder and mix well; stir into egg mixture and pour in the red wine.
    4. Pour mixture into a buttered loaf tin and bake in the preheated oven until a skewer inserted in the centre comes out clean, about 90 minutes, or
    5. Remove cake from tin and let cool. Once cooled, spread with jam, icing or ganache if desired.
