Chocolate, ginger and orange slices

    These are rich triple-ginger chocolate brownies with ground, stem and crystallized ginger and orange zest.

    • 3 eggs
    • 220g caster sugar
    • 300g dark chocolate, chopped
    • 220g salted butter
    • 4 1/2 teaspoons vanilla extract
    • 1 tablespoon instant coffee powder
    • 2 tablespoons boiling water
    • 2 stem ginger bits, finely chopped
    • 3 oranges, fine zest of
    • 50g crystallised ginger, finely diced
    • 2 teaspoons ground ginger
    • 80g self-raising flour

    1. Preheat the oven to 180 C / Gas 4. Line a 34x20x3cm baking tray.
    2. Whisk eggs and sugar until smooth, thick and pale.
    3. Melt chocolate and butter over hot water.
    4. Mix vanilla extract, coffee powder and hot water in a cup; stir in stem ginger.
    5. Add the chocolate mixture, the coffee mixture and the orange zest to the egg mixture. Stir with balloon whisk till smooth, add crystallised ginger.
    6. Sift ground ginger with flour, add to mix gently. Spoon mixture into baking tray.
    7. Bake until just firm, about 30 minutes.
    8. Cool in pan for about 10 minutes, turn out onto rack, chill then slice. Eat warm or cold.
