4 large tomatoes, washed
200g cooked prawns, finely chopped
3 tablespoons mayonnaise
1/2 lemon, juiced
salt and freshly ground pepper to taste
chopped chives, to garnish

Slice off the top of each tomato and scoop out the pulp. Reserve the pulp for another use.
Add prawns and mayonnaise to a bowl and squeeze lemon juice over the top; mix well. Season to taste with salt and pepper.
Fill each tomato with the prawn mixture.
Sprinkle chives on top of the tomatoes. Chill before serving.
