    About this recipe: Easy peasy shortbread and super quick to make. Chocolate chips are a nice addition to traditional vanilla shortbread.

    Makes: 12 rounds

    • 500g softened butter
    • 200g caster sugar
    • 2 teaspoons vanilla extract
    • 100g chocolate chips, or as desired
    • 500g plain flour, sifted

    1. Preheat the oven to 180 C / Gas 4.
    2. Cream butter and sugar until fluffy. Stir in vanilla, chocolate drops and flour. Mix well.
    3. Divide the dough into 12 pieces. Shape into balls, flatten and place onto a baking tray leaving a 1cm gap in between each one.
    4. Bake in the preheated oven for 10-12 minutes and sprinkle with sugar.
