This is a recipe I learned about a year ago. It is very easy to make. Tastes very good, too. I recommended it to my family and they agree it is very nice.
Preheat the oven to 190 C / Gas 5. Tip the pepper, tomatoes, garlic, olive oil and vinegar in a roasting tin and toss them together.
Roast them for 20 minutes, then make a space in the middle of the roasting tin for the trouts. Scatter the almonds over everything with some salt and pepper if you wish.
Return the tin to the oven until the trout flakes easily with a fork and the almonds are slightly toasted, about 12 minutes.
Serve with lemon wedges and a side of rocket salad.
