Cumin and coriander turkey breast

    My family loves this easy, healthy turkey breast recipe. Serve with a mixed green salad for a quick mid-week supper.

    Serves: 4 

    • 2 tablespoons olive oil
    • 2 turkey breast steaks, cubed
    • 1 onion, minced
    • 1 green pepper, sliced
    • 4 tomatoes, chopped
    • 1 teaspoon groud cumin
    • 1 teaspoon ground coriander
    • 1 pinch salt

    1. Heat the olive oil in a frying pan over medium high heat. Cook and stir the turkey breast pieces until golden, about 5 minutes. Stir in the onion and peppers and cook until the onion is golden, about 5 minutes.
    2. Stir in the tomatoes, cumin and coriander. Reduce the heat to medium and simmer until the tomatoes are tender, about 15 minutes. Season to taste with salt.
