Heat the olive oil in a frying pan over medium high heat. Cook and stir the turkey breast pieces until golden, about 5 minutes. Stir in the onion and peppers and cook until the onion is golden, about 5 minutes.
Stir in the tomatoes, cumin and coriander. Reduce the heat to medium and simmer until the tomatoes are tender, about 15 minutes. Season to taste with salt.
