For variety and a nutritious, refreshing change from traditional mashed potatoes, creamy puréed courgette 'mash' is a perfect substitute.
1kg courgettes, sliced
200ml double cream
salt and freshly ground black pepper to taste
- Bring a large pan of water to the boil. Add courgettes and cook for about 10 minutes, or until tender. Drain well and return to the pan.
- Purée the still-warm courgettes with a hand-held blender, then add cream and butter and blend until mixture is smooth and creamy. Season with salt and pepper to taste before serving.
