Melon carpaccio

    A nice way to present chilled ripe melon. For a non-vegetarian version you can also add a few slices of proscuitto.

    Serves: 4 

    • 1 melon
    • freshly ground pepper
    • a few fresh mint leaves, minced
    • 3 tablespoons port wine

    1. Cut melon in half, scoop out seeds and peel. Slice very thinly.
    2. Arrange melon slices on a serving plate or on individual plates in a fan pattern. Sprinkle with pepper and min leaves and drizzle with port wine.
