Pastry-free mini quiches

    These small tasty quiches with bacon and tomato are easy to prepare because they do not need pastry. You can serve them as a dinner party starter, or as individual mains accompanied by a green salad.

    Makes: 6 mini quiches

    • 1 tablespoon olive oil
    • 300g bacon
    • 6 tomatoes, sliced thinly
    • 3 eggs
    • 200ml milk
    • 200ml double cream
    • 130g plain flour
    • 180g grated cheese of your choice
    • salt and freshly ground black pepper

    1. Preheat oven to 200 C / Gas 6. Grease 6 (10cm) mini quiche or tartlet tins.
    2. Heat oil in a frying pan over medium heat and fry the bacon; drain on kitchen paper, chop and reserve.
    3. In a bowl combine eggs, milk, cream and flour and mix together until smooth. Add the grated cheese, salt and pepper and stir well. Finally, stir in the bacon and mix well.
    4. Distribute one third of the mixture evenly in the prepared tins, then add tomato slices. Top with remaining mixture.
    5. Bake in preheated oven until the surface of each mini quiche is golden brown, about 25 minutes.
