These prawns and fresh tomatoes layered in glasses are perfect for summer starter.

Serves: 4
4 tomatoes, washed and cubed
4 tablespoons olive oil
salt and freshly ground pepper to taste
15 cooked prawns, peeled and deveined
3 tablespoons mayonnaise
3 teaspoon chopped chives

In a large bowl toss the cubed tomatoes with olive oil; season with salt and pepper to taste and mix again.
Spread about 1/3 of the tomato mixture evenly in bottom of glasses, then cover with a layer of prawns. Divide the remaining tomato mixture into glasses.
In a bowl, mix remaining prawns with mayonnaise and chives. Top glasses with prawn mixture, cover and refrigerate until ready to serve.
