Butternut squash avocado soup

    Serves: 4 

    • 30g butter
    • 1/2 onion, minced
    • 2 garlic cloves, minced
    • 1 butternut squash, peeled and seeds removed, diced
    • 1L water
    • 1 ripe avocado
    • salt and pepper

    1. Heat butter in a pot and add onion Fry for 8 minutes over low heat. Add garlic and fry for a further 2 minutes.
    2. Add squash and water and bring to the boil, then simmer till the squash is tender, 15 to 20 minutes.
    3. Remove from the hob. Peel avocado and remove stone. Add to soup and puree till smooth. Salt and pepper to taste and serve.
