Don't let the French name fool you - this coconut cake is totally easy to make. Serve with custard or ice cream and fresh fruit for a lovely pud.

Makes: 1 coconut cake
180g plain flour
1 teaspoon baking powder
2 eggs
180g caster sugar
300ml milk
120g butter
80g desiccated coconut

Preheat oven to 180 C / Gas 4. Grease a 23cm round cake tin.
In a small bowl combine flour and baking powder and set aside. In another large bowl cream together the eggs and sugar. Stir in the flour mixture, then stir in the coconut and mix well.
Pour mixture into prepared cake tin and bake in preheated oven for 40 to 45 minutes or until a skewer inserted in the centre comes out clean. Let cool for 15 minutes; serve warm or cold.
