Grandma Fisher's chocolate truffle torte

    Deliciously naughty dark chocolate torte! For adults only :) Flavoured with rum, this torte requires no baking.

    Serves: 20 

    • 75g amaretti biscuits, finely crushed
    • 450g dark chocolate, chopped
    • 5 tablespoons liquid glucose
    • 2 tablespoons dark rum
    • 570ml double cream
    • 1 tablespoon cocoa powder to dust

    1. Sprinkle the crushed biscuits over the base of a greased springform tin with removable base.
    2. Melt together the chocolate, liquid glucose and rum. Stir, and once melted, take off the heat and allow to cool for 5 minutes or until it feels just warm.
    3. Beat the cream until only very slightly thickened, fold half into the chocolate mixture, then fold that mixture in to the rest of the cream.
    4. Tip into the tin on top of the crushed biscuits and tap gently to even the mixture out. Cover with clingfilm, then leave overnight in the fridge to set.
    5. The next day, tip upside down to remove from tin, dust with cocoa powder and serve.

    Serving suggestion

    Serve with whipped or pouring cream and fresh raspberries!


    The cream must only be slightly whipped to achieve a smooth and creamy finish.

    What a fantastic dessert, quite rich but absolutely mouth watering. I added a layer of biscuits on the top for the extra crunch and put greaseproof paper on the bottom of the tin.  -  21 Dec 2017
