Paupiettes (Asparagus wrapped in sausage meat and ham)

    French paupiettes can be prepared in many different ways. In this recipes thin slices of ham are rolled around asparagus and sausage - and are these ever good!

    Serves: 4 

    • 500g sausage, casings removed
    • 300g asparagus, ends trimmed
    • 8 slices dry cured ham or prosciutto

    1. Cook the sausage in a frying pan over medium heat, breaking it into small pieces with a fork, until no longer pink and beginning to brown, about 10 minutes.
    2. Bring a pan of salted water to the boil, and cook the asparagus tips until tender, about 4 minutes. Drain.
    3. Place 1 asparagus tip and an equal portion of the sausage on each ham slice, and roll into a bundle. Serve with the remaining asparagus on the side.
