About this recipe: At our house, we never throw out good food, and we always have a use for stale bread. When you have some baguette left over, put it in the soup! Perfect for small children, it melts into something like a puree.


Serves: 6 

  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 5 carrots, peeled and cut into rounds
  • 2 sticks celery, sliced
  • 3 leeks, cut into rounds
  • 1 pinch fresh thyme
  • 1.5L chicken stock
  • salt and ground black pepper
  • 1/3 stale baguette, broken into pieces

  1. Heat the olive oil in a saucepan over medium heat and cook and stir the onion until translucent, about 2 minutes. Stir in the carrots, celery and leeks and cook until golden, about 5 minutes. Sprinkle with the thyme.
  2. Pour in the chicken stock and bring to the boil. Boil for 5 minutes. Puree with a hand blender till smooth. Season with salt and pepper.
  3. Ladle the soup into individual bowls, and add the pieces of bread. Wait 2 minutes before serving.

Make it veg

Make this soup vegetarian by using vegetable stock instead.
