Caramelised banana muffins

    Whenever I have two over-ripe bananas I make these muffins. You can also add a few chopped walnuts if you like.

    Makes: 12 muffins

    • 100g butter, melted
    • 2 ripe bananas
    • 3 eggs
    • 150g icing sugar
    • 140g plain flour

    1. Preheat the oven to 200 C / Gas 6. Grease a 12-cup muffin tin.
    2. Add 1 tablespoon of the melted butter to a frying pan and cook the bananas over medium heat until golden, about 3 minutes. Mash with a fork; set aside.
    3. Whisk the eggs with the icing sugar in a bowl. Sieve the flour and stir the flour and the remaining melted butter into the egg mixture. Stir in the bananas. Fill each muffin cup 2/3 full.
    4. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 20 minutes.

    I baked this in a loaf tin instead of making muffins, the recipe is fab. Really nice tasting and moist.  -  15 Jul 2013


    To begin, I have a Special Needs son who has a limited diet so we have and one of the things he has been missing the most is the muffins and breads. I was excited to find that even when I subbed gluten free flour for the reg flour and then homemade applesauce for the butter it worked FAMOUSLY!!! He is in love!!! Thank you so much for such a pleasing recipe that is almost completely natural. The pic below is of him after eating about 4 of the muffins!  -  27 Mar 2016
