Easy beef stew in the slow cooker

    I made this for tea yesterday and I surprised myself how lovely it was. It was throw everything in the slow cooker and let it do the work. Really easy and quick to prepare. I tried it with beef but I think I will try it with chicken next time and just change the stock cube to chicken or veg. I didn't serve mine with anything but you could do potatoes too. Couldn't take a photo as it didn't last that long, sorry. lol!

    Serves: 3 

    • 500g stewing beef
    • 1 courgette, chopped
    • 3 carrots, peeled and chopped
    • As many peas as you like (can use frozen)
    • As much swede as you like (can use frozen)
    • 1 (400g) tin chopped tomatoes
    • 2 Oxo® stock cubes (beef, chick or veg) depending on meat
    • salt and pepper to taste
    • 400ml water, or as needed

    Prep:30min  ›  Cook:8hr  ›  Ready in:8hr30min 

    1. Heat a nonstick frying pan, add the beef, and brown off your stewing beef and put in your slow cooker.
    2. Add the courgette, carrots, peas and swede to the slow cooker.
    3. Add tomatoes, oxo cubes, salt and pepper, water, stir and you are ready to go.
    4. Put your slow cooker on low for 8 hours and enjoy. I did turn my slower cooker up to high after about 6 hours but I don't think you would need to.

    my lad dont like stew but he loved this i went mad and add fresh stew veg pack and it came out really good i had to put in cornflour to get it thick and left it over nite but it went so fast will do it again xx  -  26 Mar 2014
