Orange shortbread

    A very yummy and easy orange flavour shortbread biscuit. My children love them. Orange zest provides the flavour.

    Makes: 8 wedges

    • 100g softened butter
    • 2 oranges, zested
    • 50g caster sugar
    • 100g plain flour
    • 50g ground rice

    1. Preheat oven to 160 C / Gas 3. Beat the butter until soft, add the orange zest and beat lightly. Add the sugar and beat again until the mixture is very soft and creamy.
    2. Sift the flour and ground rice into the bowl and mix quickly but lightly to a smooth paste. Don`t worry if it is a bit dry.
    3. Press the paste onto a baking sheet and shape it into a 16cm circle.
    4. Prick lightly with a fork, then mark into 8 wedges with a knife. Sprinkle with sugar.
    5. Bake in the middle of the oven until it is a pale biscuit colour, 30 to 35 minutes. Leave to cool for 5 minutes.
