About this recipe:I put a lot of basil in this savoury loaf cake because I love it! This savoury cake is vegetarian and makes a tasty and lovely addition to a summer picnic.
1 tablespoon olive oil
2 large tomatoes - peeled, seeded and diced
1 handful basil leaves, chopped
150g plain flour
2 1/2 teaspoons baking powder
salt and ground black pepper to taste
200g mozzarella, cubed
50g grated cheese, your choice
12 pitted black olives

Preheat oven to 180 C / Gas 4 and grease a 900g (2 lb) loaf tin.
Heat oil in a frying pan over medium heat. Add tomatoes and cook until soft. Stir in basil and mix; set aside.
In a mixing bowl beat eggs, then add flour and baking powder and mix well. Heat milk in a small saucepan and gradually add to bowl, stirring. Add salt, pepper, mozzarella, grated cheese, olives and tomato mixture and mix well.
Pour mixture into prepared loaf tin and bake in preheated oven for 45 minutes. Let cool, slice and serve.
