Tomato, olive and mozzarella savoury cake

    I put a lot of basil in this savoury loaf cake because I love it! This savoury cake is vegetarian and makes a tasty and lovely addition to a summer picnic.

    Serves: 8 

    • 1 tablespoon olive oil
    • 2 large tomatoes - peeled, seeded and diced
    • 1 handful basil leaves, chopped
    • 3 eggs
    • 150g plain flour
    • 2 1/2 teaspoons baking powder
    • 125ml milk
    • salt and ground black pepper to taste
    • 200g mozzarella, cubed
    • 50g grated cheese, your choice
    • 12 pitted black olives

    1. Preheat oven to 180 C / Gas 4 and grease a 900g (2 lb) loaf tin.
    2. Heat oil in a frying pan over medium heat. Add tomatoes and cook until soft. Stir in basil and mix; set aside.
    3. In a mixing bowl beat eggs, then add flour and baking powder and mix well. Heat milk in a small saucepan and gradually add to bowl, stirring. Add salt, pepper, mozzarella, grated cheese, olives and tomato mixture and mix well.
    4. Pour mixture into prepared loaf tin and bake in preheated oven for 45 minutes. Let cool, slice and serve.

    Good taste but tricky to get a good cake texture as it was all very liquid. Next time I will try reducing the milk by around 25%  -  27 Aug 2012
