Crisp broccoli salad

    I've never been a big fan of broccoli, until I discovered it in recipes where it's just blanched and kept very crisp. In this salad, crunchy broccoli is mixed with grapes and apple. It's fresh, delicious and perfect for a picnic because this salad is very portable.

    Serves: 4 

    • 500g broccoli florets
    • 1 handful pine nuts
    • 1 handful raisins or sultanas
    • 1 handful fresh grapes
    • 2 apples (different varieties for colour, if possible) - washed, cored and diced
    • 2 tablespoons mayonnaise
    • freshly ground black pepper to taste

    1. Bring a large pan of water to the boil. Add broccoli and blanch for 2 minutes; drain and let cool. (You can add the broccoli to a bowl of ice water to stop the cooking process completely.)
    2. In a large bowl combine pine nuts, raisins, grapes and diced apples.
    3. Add cooled broccoli and mayonnaise. Season with pepper and mix well. Refrigerate for at least 2 hours and serve chilled.
