Bacon, onion and apple quiche

    I tasted a quiche with onion and apple in a small restaurant one afternoon and I was blown away by the mix of flavours, so I tried to replicate the recipe, adding bacon to make it a truly complete meal.

    Serves: 6 

    • 1 handful chopped bacon
    • 4 onions, chopped
    • 1 (23cm) pastry case
    • 2 apples - cored, peeled and diced
    • 100ml water
    • 1 handful cubed Gruyere, Emmental or Cheddar cheese
    • 2 eggs
    • 500ml single or double cream
    • salt and freshly ground black pepper

    1. Heat a nonstick frying pan over medium heat and brown the bacon for a few minutes. Drain bacon on kitchen paper and drain fat from pan, but don't wash it.
    2. Fry onions in pan over low heat for about 20 minutes, until soft and well caramelised.
    3. Meanwhile, preheat oven to 180 C / Gas 4. Prick the bottom of the pastry case with the tongs of a fork.
    4. Soften apples by cooking them 5 minutes in microwave with 100ml water; drain.
    5. Top pastry case with apples, cheese and onions. In a bowl, beat together eggs and cream. Season with salt and pepper to taste and pour over the quiche. Sprinkle with the cooked bacon.
    6. Bake for about 40 minutes in the preheated oven, until top of pie is golden brown. Serve hot with a green salad for dinner, or in smaller slices for a starter.

    This is the first quiche I have ever made. It was very easy, but I found it very sweet. still good though!  -  02 Jun 2013
