Preheat oven to 200 C / Gas 6. In the bowl of a food processor, cream together butter and sugar until the mixture turns white and is very light and fluffy.
Add flour and mix until well combined.
Incorporate the eggs, one at a time.
Beat until mixture is completely smooth and airy.
Line a baking tray or swiss roll tin with parchment and lightly grease. Evenly spread out the cake mixture. Bake in preheated oven for about 12 minutes (adjust depending on thickness). Turn out immediately on a clean towel, dusted with icing sugar, and remove the baking parchment.
Once cool, spread with your favourite jam.
Cut into rectangles to make slices the size of your choice. Sandwich together and serve!
