Luscious red velvet cupcakes

    Lusciously red and totally delicious, you'll love these red velvet cupcakes topped with a vanilla cream cheese icing!

    Serves: 6 

    • 350g plain flour
    • 300g caster sugar
    • 1 tablespoon unsweetened cocoa powder
    • 1 teaspoon baking powder
    • 2 eggs
    • 350ml milk
    • 350ml vegetable oil
    • 1 tablespoon vinegar
    • 1 dessertspoon vanilla extract
    • 1 teaspoon red food colouring
    • For the icing:
    • 250g cream cheese, softened
    • 200g icing sugar
    • 100g butter, softened
    • 1 dessertspoon vanilla extract

    1. Preheat oven to 180 C / Gas 4; grease muffin tins (or line with paper cases).
    2. Put the dry ingredients (flour, sugar, cocoa, baking powder) in a large bowl and mix. In another bowl beat eggs together with milk, oil, vinegar, 1 tablespoon vanilla extract and food colouring. Combine dry and wet ingredients and mix well.
    3. Spoon mixture into prepared tins, filling each cup about 2/3 full. Bake in the preheated oven for 25 minutes, or until the cakes test done when a skewer comes out clean.
    4. Meanwhile, prepare the icing: Mix together the cream cheese, icing sugar, softened butter and the remaining vanilla extract.
    5. Unmould cupcakes and let cool before icing.
