Simple oven roasted aubergines

    Aubergines roasted in the oven, with just a little garlic and olive oil. Simple, delicious, and quick!

    Makes: 2 large roast aubergines

    • 2 large or 4 small aubergines
    • 4 tablespoons olive oil
    • 2 cloves garlic, quartered
    • salt and freshly ground pepper to taste

    1. Preheat the oven to 240 C / Gas 9. Wash the aubergines and cut them in half lengthways. Place on a baking tray or in a baking dish, skin side down.
    2. Make a few slits in the flesh of the aubergine lengthways and tuck the garlic pieces into the slits. Drizzle aubergines with olive oil and sprinkle with salt and pepper.
    3. Bake in preheated oven for about 30 minutes. Halfway through roasting, baste again with olive oil or cover with aluminium foil for a lower fat alternative.
    4. Enjoy roasted aubergine as is (with or without skin, according to taste) or scoop the flesh out of the skins to make aubergine dip or mash.

    Great starting point for doing things with roast aubergines. Aubergines work wonders as a non-meat centrepiece for a meal. This recipe gives you the no frills basics, a great springboard for a whole range of aubergine centred meals.  -  22 Dec 2014


    Thank you for the recipe. I recently returned to being a vegetarian and started getting a veg box from a local company. Aubergine was one of the things in my first box. It worked out really well and was very tasty! This is the first time I've ever cooked with aubergine.  -  03 Aug 2016
