Ingredients
Serves: 4
1kg fresh langoustines
1 bouquet garni
1 tablespoon coarse sea salt
mayonnaise for serving

Bring a large pot of salted water to the boil. Add langoustines and bouquet garni and bring back to the boil.
Reduce heat to low and simmer for 15 minutes (if shells begin to break, remove langoustines from water immediately).
Remove langoustines from water and serve with mayonnaise.
