Octopus salad

    This French recipe for octopus salad is fresh, tasty and perfect for summer. Season with garlic and lemon to your liking. Be sure to get fresh octopus from a proper fishmonger and have him take out the beak and ink (unless you want to use the ink for cooking)!

    Serves: 4 

    • 2.5kg fresh octopus
    • 3 tablespoons olive oil
    • juice of 1 or 2 lemons, to taste
    • 1 or 2 cloves garlic (to taste), chopped
    • 1 tablespoon chopped fresh parsley
    • salt and freshly ground black pepper to taste

    1. Cook octopus in a pressure cooker for about 20 minutes. (You do not need to add liquid, as the octopus releases its own juices.)
    2. Meanwhile, prepare dressing: In a small bowl beat olive oil with lemon juice, garlic, parsley, salt and pepper.
    3. Cut cooked octopus into small pieces and place in a large bowl. Pour dressing over octopus and toss together.
    4. Cover and refrigerate for at least 1 hour; serve chilled.
