100g salted butter, softened
100g grated Parmesan cheese
100g plain flour
1 bunch fresh basil, chopped
4 tablespoons olive oil, divided
2 pinches salt, divided
1kg fresh tomatoes, chopped
1 tablespoon caster sugar

Preheat the oven to 190 C / Gas 5 and grease a 20x30cm baking tin.
In a large mixing bowl combine butter, cheese, flour and breadcrumbs. Work crumb mixture with your fingertips until it has the consistency of coarse salt; set aside.
In a food processor (or by hand) mix basil with 3 tablespoons olive oil and a pinch of salt.
Heat 1 tablespoon olive oil in a frying pan over medium heat; add tomatoes and cook for 10 minutes, then sprinkle with sugar and a pinch of salt.
Spread tomato mixture in prepared tin. Sprinkle with breadcrumb mixture and pour basil sauce over all.
Bake in preheated oven for 30 minutes or until crumble is slightly toasted. Serve warm, though it's also delicious cold!
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
