Barbecued fruit brochettes

    These sweet little fruit brochettes are the perfect BBQ dessert. You can use your favourite fruits and also serve with ice cream.

    Ingredients
    Serves: 4 

    • 1/2 pineapple, cut into pieces
    • 1 apple - cored, peeled and cut into chunks
    • 1 banana, cut into thick slices
    • 150g strawberries - hulled and sliced
    • 3 tablespoons honey
    • juice of 1 lemon
    • 160g plain chocolate, cut into pieces

    Method

    1. Preheat barbecue for low heat.
    2. Slide assorted fruit pieces onto wooden or metal skewers. (Soak wooden skewers in water first.)
    3. In a small bowl mix honey with lemon juice and brush fruit with mixture to glaze.
    4. Barbecue fruit skewers, turning regularly, for about 5 minutes (they should be lighly browned but fruit still firm).
    5. Meanwhile, melt chocolate in a double boiler or the microwave, stirring occasionally.
    6. Place barbecued fruit brochettes on plates and drizzle with melted chocolate. Add a scoop of vanilla ice cream or top with chipped cream and serve.
