Quiche with a little bit of smoked salmon and a few figs and voila, you have a beautifully sweet and salty quiche! After I made this the first time it was requested again, so I've written down the recipe and I'm keeping it!

200g grated Comté cheese
1 tablespoon crème fraîche
100g smoked salmon, cut into pieces
salt and ground black pepper to taste
1 (23cm) unbaked shortcrust pastry case
200g fresh figs, halved
Method Prep:10min › Cook:30min › Ready in:40min
Preheat oven to 180 C / Gas 4.
In a large bowl beat eggs with cheese and crème fraîche; add salmon and season with salt and pepper to taste. Tip mixture into pastry case, then place fig halves on top, flat side down, in a nice pattern.
Bake in preheated oven for 30 minutes and serve hot or cold.
If you like, add small cherry tomatoes on top as well.
