Much lighter and healthier than gratin, this is a French tian of delicious vegetables. A little olive oil, herbs de Provence and seasonal summer veg, here's a recipe that will accompany your meat or fish beautifully.

4 tablespoons olive oil
1 aubergine, thinly sliced
2 courgettes, thinly sliced
1 onion, thinly sliced
3 tomatoes, thinly sliced
salt and freshly ground black pepper to taste

Pour 1 tablespoon of oil in the bottom of a 20x30cm baking tin. Arrange a row of aubergines, row of courgettes, row of onions and row of tomatoes; repeat until all vegetables are used. Season with salt and pepper, sprinkle with herbs and drizzle with remaining olive oil.
Bake in preheated oven for about 45 minutes, basting regularly with the veg juices in the tin; if the veg starts browning too quickly, cover with aluminium foil and continue baking. When done, vegetables should be tender.
