Feuilleté de saumon (Salmon puff pastry parcels)

    This salmon recipe is easy to prepare and it will hit with your guests for a dinner party! I serve these beautiful salmon parcels with fresh green salad.

    Serves: 4 

    • 200ml crème fraîche
    • 1 lemon, juiced
    • chopped fresh dill to taste
    • salt and freshly ground pepper to taste
    • 2 sheets puff pastry
    • 4 (150g) skinless, boneless salmon fillets
    • 1 egg yolk, beaten
    • 1 tablespoon olive oil

    1. Preheat oven to 200 C / Gas 6.
    2. In a small bowl combine crème fraîche, lemon juice, dill, salt and pepper; set aside.
    3. Roll out puff pastry sheets and cut in half; place a salmon fillet on each piece of pastry, and top each with 1/4 of the crème fraîche mixture. Brush edges of pastry with egg yolk and fold inwards, sealing edges tightly. Brush outside of pastry with egg.
    4. Spread olive oil in the bottom of a baking tin. Arrange parcels in tin and bake in preheated oven for 30 minutes (the pastry should be golden brown).
