200ml crème fraîche
1 lemon, juiced
chopped fresh dill to taste
salt and freshly ground pepper to taste
2 sheets puff pastry
4 (150g) skinless, boneless salmon fillets
1 egg yolk, beaten
1 tablespoon olive oil

Preheat oven to 200 C / Gas 6.
In a small bowl combine crème fraîche, lemon juice, dill, salt and pepper; set aside.
Roll out puff pastry sheets and cut in half; place a salmon fillet on each piece of pastry, and top each with 1/4 of the crème fraîche mixture. Brush edges of pastry with egg yolk and fold inwards, sealing edges tightly. Brush outside of pastry with egg.
Spread olive oil in the bottom of a baking tin. Arrange parcels in tin and bake in preheated oven for 30 minutes (the pastry should be golden brown).
