Vegetarian red wine spaghetti Bolognese

About this recipe: A delicious take on the classic Bolognese that is just as quick and simple. Despite being made with red wine for a more fruity taste, the addition of Marmite keeps it hearty and meaty - it caters for everyone!

Serves: 4 

  • 200g Quorn® mince
  • cooking spray
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1 spaghetti Bolognese OXO® cube
  • 2 teaspoons mixed herbs
  • 1 teaspoon basil
  • 2 tablespoons double concentrated tomato puree
  • 2 teaspoons marmite
  • 1 handful cherry tomatoes, chopped (optional)
  • 1 handful mushrooms, sliced (optional)
  • 250ml red wine
  • 400g spaghetti
  • salt and pepper to taste

  1. Whilst cooking Quorn® as per instructions, cover non-stick pan with cooking spray and fry onions and garlic over a medium heat for 2 minutes.
  2. Add Quorn® to onions and garlic, and add OXO® cube, herbs and basil; stir through.
  3. Add tomato puree, Marmite (for those of you that don't like Marmite - neither do I, so don't worry!) and chopped tomatoes and/or mushrooms if desired and cook for 2 minutes.
  4. Add red wine and simmer gently for around 10 minutes. If more of a saucy Bolognese is required, add more red wine or a vegetable stock as needed.
  5. Meanwhile, boil the spaghetti in plenty of boiling water as per packet instructions. Drain well.
  6. Season sauce to taste with salt and pepper, then combine with drained pasta and toss well. Serve.

To serve...

Serve sprinkled with cheese and garlic bread on the side.
