Smoked duck breast salad with walnuts and Parmesan cheese shavings

    A very pleasant duck salad, ready in only five minutes. This makes a lovely light lunch or simple starter.

    Serves: 1 

    • 2 large handfuls mixed salad of your choice
    • 1 small fresh white onion, sliced into fine slivers
    • 1 large white mushroom, sliced
    • a few pumpkin seeds
    • 1 walnut, slivered
    • Parmesan cheese shavings
    • 1 tablespoon olive oil
    • 1 teaspoon balsamic vinegar
    • 1 pinch ground black pepper
    • 1 pinch salt
    • 7 thin slices smoked magret (duck breast fillet)

    1. Scatter the mixed salad onto a salad plate. Distribute the slivered onion and mushroom slices over the salad.
    2. Roast the pumpkin seeds in a dry frying pan for 5 minutes over high heat, and strew the pumpkin seeds, walnut slivers and Parmesan cheese shavings over the salad.
    3. Sprinkle with olive oil and balsamic vinegar and season with salt and pepper. Place the duck breast fillets in the shape of a flower over the salad, and serve immediately.
