Bacon and feta green salad

    Sounds like a peculiar combination at first, but this green salad is delicious! Serve with your favourite vinaigrette. Walnuts or almonds also work a treat instead of cashews.

    Serves: 4 

    • 250g unsmoked back bacon
    • 200g green salad leaves
    • 200g cherry tomatoes
    • 200g feta cheese, crumbled
    • 150g cashew nuts

    1. Cook the bacon in a frying pan over low heat until heated through and lightly browned, about 5 minutes. Let cool.
    2. Divide the salad leaves evenly onto 4 salad plates. Sprinkle each salad with 1/4 of the cherry tomatoes, feta cheese and cashew nuts. Place the bacon on top of each plate to serve.
