About this recipe: Want perfect profiteroles every time? This is your recipe! These basic profiteroles puff up in the oven, yielding hollow centres that beg to be filled with cream and topped with chocolate.

Makes: 20 to 25 profiteroles

  • 110g butter, cubed
  • 240ml water
  • 1/4 teaspoon salt
  • 125g plain flour
  • 4 eggs
  • 300ml whipping cream
  • 200g chocolate, melted

  1. Preheat oven to 220 C / Gas 7.
  2. In a large saucepan, bring water and butter to the boil. Stir in flour and salt until the mixture forms a ball. Transfer the mixture to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking tray.
  3. Bake profiteroles for 20 to 25 minutes in the preheated oven, until golden brown. The centres should be dry. Pierce the side of each one to let out the steam. Leave them to cool and dry out on a wire rack.
  4. Meanwhile, in a medium bowl, whisk the whipping cream until thick.
  5. When the profiteroles are cool, and you are ready to serve, gently split each one; fill with whipped cream. Drizzle with the melted chocolate.

Puffed ip lovely! I made mine a bit too big, but still look great. If you wet the baking trays, it help the pastry rise. - 20 Feb 2016


Tried this recipe twice very disappointed. Dough far too soft. Quanties dont tally. Measured exactly as recipe. Wouldnt try it again - 06 May 2016
